Q. I would like to bake for a vegan family member. How do you substitute for eggs and dairy (milk, butter) which seem to be the basic foundations of deserts? Saw the lovely chocolate cake MOO mix recipe in last newsletter but that asked for Milk Powder -- all other ingredients were vegan! What can I substitute for the milk powder? Nova
A. There are lots of vegan friendly dairy substitutes available these days, many more than when I was growing up (no, I'm not vegan, but I do have a mainly vegetarian diet). These days you can get vegan cream that actually tastes and behaves like regular dairy cream. It comes at a price, but for special occasions it's delicious.
Shop at kosher supermarkets and delis for the best range of vegan products, at realistic prices. Health food stores and supermarkets will be expensive.
Now there are a number of substitutes for the milk powder in the MOO mixes:
Soy milk powder
Coconut milk powder
Or:
Rice milk
Soy milk
Coconut milk
Almond milk
If you use the milks, remember to adjust the water component in the recipe.
