MOO No. 14 Poultry Seasoning
Want to make a roast chicken that smells and tastes as good as one from the local barbecue chicken shop, but without the cost of buying a packet of seasoning and without the nasties?
Then you are going to love this seasoning recipe!
I've given two recipes, both with the same ingredients - one a single recipe, and the other the bulk recipe. If you roast chicken regularly then it just makes sense to make a bulk batch while all the herbs are out.
Poultry Seasoning - Single Recipe
Ingredients:
2 tsp ground sage
1 tsp ground thyme
1 tsp ground marjoram
3/4 tsp ground rosemary
1/2 tsp nutmeg
1/2 tsp cracked black pepper
Method:
Combine all ingredients together.
To use, rub over skin of chicken before baking and/or add to the stuffing mix.
This makes the equivalent of one packet of poultry seasoning.
Poultry Seasoning - Bulk Recipe
Ingredients:
3 tbsp ground sage
1-1/2 tbsp ground thyme
1-1/2 tbsp ground marjoram
1 tbsp ground rosemary
2 tsp nutmeg
2 tsp cracked black pepper
Method:
Combine all ingredients together. Store in a clean, dry jar.
To use, rub over skin of chicken before baking and/or add to the stuffing mix.
This makes the equivalent of four packets of poultry seasoning.
