100 Days to a Cheapskates Style Christmas Day 18 Raspberry Cordial
For the gourmet on your gift list, a bottle of delicous, fresh, raspberry cordial is a must. So much better than the stuff you buy, this cordial is quick to make, costs under $5 to make and tastes divine.
Ingredients:
500g raspberries
3 cups sugar
1 tsp citric acid
Juice 1 lemon
500ml boiling water
1.5 litres cold water
Method:
Sterilise your bottles and caps. This step is important.
Dissolve the sugar and citric acid in the boiling water in a large bowl. Place the raspberries in a blender or food processor and puree. Add the pureed raspberries, lemon juice and 1.5 litres of cold water to the sugar water mixture. Stir to combine. If you don't want the seeds in your cordial strain it before bottling in sterilised bottles. Store in a cool, dark cupboard.
To serve use one part cordial to four parts cold water or soda water or plain mineral water.
Notes:
Raspberries - fresh or frozen can be used.
Bottles - glass bottles can be recycled. I save Bickfords cordial bottles and buy new caps (around $3 for 20 from home brew type shops and some Big W stores).
